Kids’ Corny Cheesy Quesadillas
Crispy, cheesy quesadillas made for little appetites, served with creamy guac for dipping plus cool cucumber wheels and juicy grape tomatoes on the side.
Ingredients
For 2 servings
- 3 unit Chick'n Dippin' Sauce
- 1 unit Corn
- 4 tablespoon Cream Cheese
- 2 unit Flour Tortillas
- 4 ounce Grape Tomatoes
- 4 tablespoon Guacamole
- 1 unit Mini Cucumber
- ½ cup Mozzarella Cheese
- 1 tablespoon Southwest Spice Blend
Additional Ingredients
- 1 tablespoon Butter
- 1 teaspoon Cooking Oil
- Pepper
- Salt

Swaps and substitutions
For dairy-free eaters, swap the cream cheese and mozzarella for plant-based versions that melt well, and use a dairy-free dip. For gluten-free needs, replace the flour tortillas with certified gluten-free tortillas; for egg-free, avoid any dip containing egg and choose a plain guacamole or salsa instead.
What to serve with it
Serve with a simple fruit salad, crunchy veggie sticks, or a light bean soup to make the meal more filling without overpowering the quesadillas. A splash of salsa or a mild yogurt dip also works well alongside the guac and fresh vegetables.
